Thoughts on a Vegan Diet with Dave Walls

How long have you been a vegan?
Seven years.

What are some of your favorite meals?
I like sauteed vegetables, particularly broccoli, cauliflower and Brussel sprouts. The one food that does the most for my health is a big salad. I try to eat that several times a week. To make it filling I put in broccoli, cauliflower, olives, and sometimes artichoke hearts.

If you eat at restaurants, what foods or places have you found helpful?
I don't eat at restaurants much, as I have some food sensitivities. Sometimes I'll get a plain baked potato at Wendy's to take away the hunger. I try to keep nuts or Larabars in the car to eat if I'm out, rather than eat at a restuarant. I sometimes eat vegan bowls at California Tortilla. I occasionally eat at the cafe at Moms Organic Market in the DC area; they serve only organic meals.

Have you notices any benefits since you changed your diet?
Before I went vegan, I gave up meat; I lost 28 pounds in about four months.

What tips do you have for anyone who wants to try a vegan diet?
I would highly recommend the frozen dinners and soups from Amy's Kitchen. When I first started transitioning my diet I lived on these. About half of their products are vegan and will say so on the label. I still like Indian Korma, mock "meat" loaf, lentil soup, and their rustic Italian soup.

Are there any books, websites or other resources you'd recomend?
 I refer to websites from Gabriel Cousens, MD, Neal Barnard MD, Joel Furhman, MD and Caldwell Esselstyn, MD. I like the Jane Unchained cooking videos, and cooking videos by Jason Wrobel. and Fully Raw Kristina,

Any final thoughts?
Definitely one of the best things I've done is switch to a vegan diet. As I've gotten older, I can't imagine how my health would be if I hadn't lost all that weight.
